Sheet Pan Chicken and Veggies

Ingredients
- 2 lbs red potatoes in 3/4" pieces
- 5 carrots sliced
- 2 Tbs olive oil
- 3/4 tsp garlic powder
- 1 1/4 tsp salt, divided
- 1 tsp rosemary or oregano, divided
- 3/4 tsp pepper, divided
- 1/2 tsp paprika
- 2 lbs chicken
- 1 bell pepper, chopped
- 1 zuchini, sliced
- 3 large mushrooms, chopped
Instructions
- Preheat oven to 425
- combine potatoes, onions, carrots, 3/4 tsp salt, 1/2 tsp rosemary, and 1/2 tsp pepper in a large bowl and toss to coat
- coat baking pan with cooking spray and transfer vegetables to tray. cook for 10 minutes
- while those cook, sprinkle remaining spices on chicken.
- arrange the chicken on the tray, return to oven for 25-20 minutes
- spread the remaining vegetables on the tray. Cook for 10 more minutes
- stir vegetables together and serve
